Audit qualité GFSI : les indispensables pour une inspection réussie

For a quality manager in the food industry, the word “audit” can trigger a wave of stress. The approach of an inspection, especially a Global Food Safety Initiative (GFSI) certification (in French only), can put immense pressure on your teams. The stakes are high, as you must prove that your processes are not only compliant but also robust and reliable.

The good news? We’re here to help you figure it all out! This blog post isn’t just a checklist; it’s a guide to help you prepare for your next GFSI inspection with confidence. So, let’s take a look at the key points that auditors examine.

Why is the GFSI audit an asset?

Before diving into preparation, let’s remember that GFSI certification isn’t just a constraint; it’s a valuable opportunity. It’s a globally recognized standard that opens doors to new markets, builds trust with your partners, and, most importantly, ensures the safety of your consumers. Viewing the audit as an opportunity to improve and validate your process changes the whole perspective.

What is the impact of GFSI on food regulations?

It’s essential to keep in mind that GFSI is not a government regulation, but an industry‑led initiative. However, the impact of GFSI standards on food regulations is huge. By establishing a globally recognized benchmark of excellence, they raise the bar for the entire industry. For a company, obtaining GFSI‑recognized certification is often proof that it meets, and even exceeds, these regulatory requirements.

The 4 pillars of flawless audit preparation

An auditor is seeking, above all, evidence of control. Here’s where to focus your efforts.

  1. Flawless documentation
This is the foundation, and the link between HACCP and GFSI is fundamental in this regard. Ensure that all your records are up‑to‑date, accessible, and comprehensible, including HACCP manuals, cleaning records, employee training records, and allergen management procedures. The documentation must reflect the reality of your plant.

  2. Foolproof traceability processes
The auditor will test your traceability system. Will they be able to trace a batch upstream (to suppliers) quickly and downstream (to customers)? This is where the reliability of your marking and coding comes into play. Illegible or faded batch codes, expiration dates, and traceability information can result in significant non‑compliance.

  3. Controlled production operations
From prime material handling to shipping, every step must be controlled. This includes preventive equipment maintenance, foreign object control, and, of course, packaging and labelling integrity.

  4. Team involvement and training
No matter how good a system is, it relies on the people who operate it. The auditor will ensure that your employees are aware of their roles, understand the procedures, and have received training in best practices.

Your marking equipment: your ally in GFSI certification

It may not be immediately apparent, but your industrial printers play a crucial role in your success during a GFSI certification audit. An auditor will check:

  • The legibility of codes. Ensure that dates, batch numbers, and other codes are clear and easily readable by both humans and machines.
  • The permanence of the marking. Check that the ink is resistant to your production conditions (condensation, friction, cold, etc.). A code that fades is a code that doesn’t exist!
  • The accuracy of the information. Demonstrate that your marking system is reliable and minimizes the risk of human error when entering data.
  • Data validation and integration. Can your system generate a report that proves the correct information has been printed on the proper products? Is it connected to your central management system to avoid data entry errors? Integrated digital traceability is a key proof of control that auditors highly value.

Well‑maintained equipment and appropriate technology are not details; they are essential pieces of evidence for the auditor.

Be confident for your next audit
